Schoon Breads are prepared from freshly milled grains from stone ground flour (the endosperm, bran, and germ remain in their natural, original proportions) from Gideon Milling with no genetic modifications, no sugar or other additives, no bleaching and no seasonal correctors. They use a low grinding process with high nutrition retention. Gideon Milling is a local supplier and they source their wheat from sustainble farmers (biological farming that is based on a crop rotation system). They use an old tradional grinding method. Their millstones are made exclusively from natural materials such as emery, flint, and magnesite.
